Ingredients:

  • 2 medium zucchini (approx. 1 lb / 450g), cut into batons
  • 1/2 tsp (3g) kosher salt
  • 1/2 cup (65g) all-purpose flour
  • 2 large eggs, beaten
  • 1 cup (60g) Panko breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese
  • 1 tsp (3g) garlic powder
  • 1/2 tsp (1g) smoked paprika
  • 1/4 tsp (1g) black pepper
  • 2 tbsp (30ml) olive oil spray

Instructions:

  1. Toss zucchini sticks with 1/2 tsp salt and let sit for 5–10 minutes to extract moisture. Use paper towels to firmly pat every stick dry.
  2. Set up three dredging bowls: one with all-purpose flour, one with beaten eggs, and one with a mixture of Panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, and black pepper.
  3. Coat each zucchini stick in flour, shaking off the excess, then dip into the egg wash, and press firmly into the Panko mixture until fully encrusted.
  4. Gently press the breadcrumbs into the zucchini with your fingers to ensure the coating adheres tightly.
  5. Lightly spray the air fryer basket. Arrange zucchini in a single layer without crowding.
  6. Spray the tops of the fries generously with olive oil spray.
  7. Air fry at 400°F (200°C) for 4 minutes. Flip each fry using tongs, spray the other side, and cook for another 4–5 minutes until mahogany-colored and crisp.
