Ingredients:
- 2 medium zucchini (approx. 1 lb / 450g), cut into batons
- 1/2 tsp (3g) kosher salt
- 1/2 cup (65g) all-purpose flour
- 2 large eggs, beaten
- 1 cup (60g) Panko breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese
- 1 tsp (3g) garlic powder
- 1/2 tsp (1g) smoked paprika
- 1/4 tsp (1g) black pepper
- 2 tbsp (30ml) olive oil spray
Instructions:
- Toss zucchini sticks with 1/2 tsp salt and let sit for 5–10 minutes to extract moisture. Use paper towels to firmly pat every stick dry.
- Set up three dredging bowls: one with all-purpose flour, one with beaten eggs, and one with a mixture of Panko breadcrumbs, grated Parmesan, garlic powder, smoked paprika, and black pepper.
- Coat each zucchini stick in flour, shaking off the excess, then dip into the egg wash, and press firmly into the Panko mixture until fully encrusted.
- Gently press the breadcrumbs into the zucchini with your fingers to ensure the coating adheres tightly.
- Lightly spray the air fryer basket. Arrange zucchini in a single layer without crowding.
- Spray the tops of the fries generously with olive oil spray.
- Air fry at 400°F (200°C) for 4 minutes. Flip each fry using tongs, spray the other side, and cook for another 4–5 minutes until mahogany-colored and crisp.
