Ingredients:

  • 4 Cod Fillets (approx. 6 oz each)
  • 0.5 tsp Sea Salt
  • 0.25 tsp Cracked Black Pepper
  • 0.5 tsp Sweet Paprika
  • 13.5 oz full-fat coconut milk
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh ginger, grated
  • 1 large lemon, zested and juiced (2 tbsp juice)
  • 1 tsp turmeric powder
  • 1 tsp honey
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C). Pat the cod fillets with paper towels until completely dry to ensure the sauce adheres properly.
  2. Season both sides of the cod fillets with sea salt, black pepper, and sweet paprika. Arrange the fillets in a 9x13 inch baking dish.
  3. In a medium mixing bowl, whisk together the full-fat coconut milk, minced garlic, grated ginger, lemon zest, 2 tablespoons of lemon juice, honey, and turmeric until the sauce is a uniform golden color.
  4. Pour the coconut mixture over the cod fillets until they are halfway submerged. Bake for 15 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Garnish with fresh chopped parsley before serving.
