Ingredients:
- 4 Cod Fillets (approx. 6 oz each)
- 0.5 tsp Sea Salt
- 0.25 tsp Cracked Black Pepper
- 0.5 tsp Sweet Paprika
- 13.5 oz full-fat coconut milk
- 2 cloves garlic, finely minced
- 1 tbsp fresh ginger, grated
- 1 large lemon, zested and juiced (2 tbsp juice)
- 1 tsp turmeric powder
- 1 tsp honey
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C). Pat the cod fillets with paper towels until completely dry to ensure the sauce adheres properly.
- Season both sides of the cod fillets with sea salt, black pepper, and sweet paprika. Arrange the fillets in a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together the full-fat coconut milk, minced garlic, grated ginger, lemon zest, 2 tablespoons of lemon juice, honey, and turmeric until the sauce is a uniform golden color.
- Pour the coconut mixture over the cod fillets until they are halfway submerged. Bake for 15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh chopped parsley before serving.
