Ingredients:

  • 1 cup warm milk
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 1/3 cup melted unsalted butter
  • 1/2 cup mashed overripe banana
  • 1 large egg
  • 3.5 cups bread flour
  • 1 tsp salt
  • 1/2 cup softened unsalted butter
  • 3/4 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup mashed banana
  • 1/2 cup finely chopped walnuts
  • 4 oz softened cream cheese
  • 2 tbsp softened unsalted butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

Instructions:

  1. Combine warm milk (105-115°F) and sugar in a bowl. Sprinkle yeast on top and let it sit for 5-10 minutes until foamy.
  2. Whisk in the melted butter, mashed banana, and egg until smooth.
  3. Gradually stir in the bread flour and salt using a wooden spoon or mixer until a shaggy dough forms.
  4. Knead by hand or with a dough hook for 5-7 minutes until the dough is tacky but no longer sticks to fingers and pulls away cleanly from the bowl.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for 1 hour until doubled in size.
  6. Gently press the air out of the dough and turn it out onto a floured surface.
