Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 1/2 cups)
  • 1/2 cup unsalted butter, melted
  • 3/4 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup full-fat sour cream
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray and line the bottom and two long sides with a parchment paper sling.
  2. In a large bowl, mash the overripe bananas with a fork until mostly smooth. Whisk in the melted butter, brown sugar, egg, vanilla extract, and sour cream until emulsified.
  3. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Gently fold the dry ingredients into the wet base using a rubber spatula until no streaks of flour remain.
  4. Toss chocolate chips with a pinch of flour, then gently fold them into the batter. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 50–60 minutes. The loaf is done when the edges pull slightly from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
