Ingredients:
- 3 large overripe bananas, mashed (approx. 1 1/2 cups)
- 1/2 cup unsalted butter, melted
- 3/4 cup light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1/4 cup full-fat sour cream
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or non-stick spray and line the bottom and two long sides with a parchment paper sling.
- In a large bowl, mash the overripe bananas with a fork until mostly smooth. Whisk in the melted butter, brown sugar, egg, vanilla extract, and sour cream until emulsified.
- In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Gently fold the dry ingredients into the wet base using a rubber spatula until no streaks of flour remain.
- Toss chocolate chips with a pinch of flour, then gently fold them into the batter. Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes. The loaf is done when the edges pull slightly from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
