Ingredients:
- 3 large ripe bananas, mashed (approx. 350g)
- 1/2 cup unsalted butter, melted and cooled (113g)
- 1/2 cup light brown sugar, packed (100g)
- 1 large egg
- 1/4 cup sour cream (60g)
- 1 tsp vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1 tsp ground cinnamon (2g)
- 1/2 tsp salt (3g)
- 3/4 cup chopped walnuts, toasted (85g)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- In a large bowl, mash the bananas until smooth.
- Whisk in the melted butter and brown sugar until combined.
- Stir in the egg, sour cream, and vanilla until the mixture is velvety and uniform.
- Sift the flour, baking soda, cinnamon, and salt into the wet mixture.
- Using a spatula, gently fold the ingredients together just until no streaks of flour remain; do not overmix.
- Gently stir in the toasted walnuts, ensuring they are distributed evenly.
- Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
