Ingredients:

  • 3 large ripe bananas, mashed (approx. 350g)
  • 1/2 cup unsalted butter, melted and cooled (113g)
  • 1/2 cup light brown sugar, packed (100g)
  • 1 large egg
  • 1/4 cup sour cream (60g)
  • 1 tsp vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 tsp salt (3g)
  • 3/4 cup chopped walnuts, toasted (85g)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. In a large bowl, mash the bananas until smooth.
  3. Whisk in the melted butter and brown sugar until combined.
  4. Stir in the egg, sour cream, and vanilla until the mixture is velvety and uniform.
  5. Sift the flour, baking soda, cinnamon, and salt into the wet mixture.
  6. Using a spatula, gently fold the ingredients together just until no streaks of flour remain; do not overmix.
  7. Gently stir in the toasted walnuts, ensuring they are distributed evenly.
  8. Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
