Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- ¾ tsp (4g) salt
- ½ cup (115g) cold unsalted butter, cubed
- ¾ cup (180ml) cold buttermilk
- 1 lb (450g) cremini mushrooms, finely chopped
- 3 tbsp (42g) unsalted butter
- 1 small (100g) yellow onion, finely diced
- 3 cloves (9g) garlic, minced
- ¼ cup (32g) all-purpose flour
- 2 cups (480ml) whole milk
- 1 tsp (2g) smoked paprika
- ½ tsp (3g) cracked black pepper
- 1 tsp (6g) kosher salt
Instructions:
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- Use a pastry cutter or fork to work the cold butter into the flour until the mixture resembles coarse crumbs.
- Stir in the cold buttermilk just until a dough forms; do not overmix.
- Pat the dough into a 1-inch thick circle on a floured surface, cut into rounds, and bake for 12–15 minutes until the tops are golden.
- Heat 1 tbsp of butter in a skillet over medium-high heat. Add the chopped mushrooms in a single layer and let sit undisturbed for 3–4 minutes until mahogany-colored.
- Stir and cook the mushrooms for another 3 minutes until moisture has evaporated.
- Reduce heat to medium. Add the remaining butter, diced onion, and garlic, sautéing until the onion is translucent.
- Sprinkle in the flour and stir constantly for 2 minutes to cook out the raw flour taste.
- Slowly whisk in the milk, stirring continuously to prevent lumps. Simmer for 5 minutes until the gravy is thick and glossy.
- Stir in the smoked paprika, salt, and pepper.
