Ingredients:
- 2 ½ cups (310g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1 tbsp (18g) freshly cracked black pepper
- 1 tsp (6g) fine sea salt
- 1 tsp (4g) granulated sugar
- ½ cup (115g) unsalted butter, chilled and cubed
- 1 cup (240ml) cold buttermilk
- 2 tbsp (30g) melted butter
Instructions:
- Whisk together the flour, baking powder, salt, sugar, and black pepper in a large bowl. Ensure the pepper is spread evenly.
- Add the chilled butter cubes to the flour. Use a pastry cutter or fork to work the butter in until the mixture looks like coarse crumbs with some pea sized lumps left.
- Make a well in the center of the dry mix. Pour in the cold buttermilk.
- Stir with a spoon just until the flour is moistened. Note: Stop as soon as a sticky dough forms to avoid toughness.
- Turn the dough onto a floured surface. Gently pat it down to a 1 inch thickness.
- Cut into circles or scoop as drop biscuits onto a parchment lined sheet.
- Bake at 425°F (218°C) for 12–15 minutes until the tops are golden brown and the edges are crisp.
- Remove from the oven and immediately brush the tops with melted butter.
