Ingredients:

  • 2 (6 oz) salmon fillets, skin-on
  • 1 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp cracked black pepper
  • ¼ cup packed light brown sugar
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tsp lemon juice
  • ½ tsp garlic powder

Instructions:

  1. Pat the salmon fillets extremely dry with paper towels to ensure a proper sear.
  2. Rub the fillets with olive oil, salt, and pepper.
  3. Line a baking sheet with aluminum foil or parchment paper.
  4. In a small bowl, whisk together brown sugar, Dijon mustard, soy sauce, lemon juice, and garlic powder until it forms a thick, uniform paste.
  5. Spoon the glaze generously over the top of each fillet, spreading it to the edges.
  6. Place in a preheated oven at 425°F (218°C) and bake for 12-14 minutes.
  7. Turn the broiler to 'High' for the final 2 minutes, watching closely until the glaze bubbles and turns a deep, dark brown.
  8. Remove from oven and let the fish rest for 3 minutes to allow juices to redistribute.
