Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) baking soda
- 1 tsp (6g) granulated sugar
- 1 tsp (6g) fine sea salt
- 1/2 cup (113g) unsalted butter, frozen and cubed
- 1 cup (240ml) full-fat buttermilk, chilled
- 2 tbsp (28g) melted butter
Instructions:
- Preheat your oven to 450°F (230°C). In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until perfectly combined.
- Add the frozen butter cubes to the flour. Use a pastry cutter or fork to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
- Pour the chilled buttermilk into the bowl. Using a rubber spatula, stir gently—just until no streaks of dry flour remain. The dough should look shaggy and slightly wet; do not overmix.
- Drop rounded tablespoons of dough onto a parchment-lined sheet or a greased cast iron skillet, spacing them 1.5 inches apart.
- Bake for 13–15 minutes until the tops are mahogany-colored and the edges are set. Remove from the oven and immediately brush with melted butter.
