Ingredients:
- 3 large overripe bananas, mashed (approx. 450g)
- 1/2 cup unsalted butter, melted (115g)
- 3/4 cup light brown sugar, packed (150g)
- 1 large egg, room temperature (50g)
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1 tsp ground cinnamon (2g)
- 3/4 cup chopped walnuts or pecans, toasted (85g)
Instructions:
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas with a fork until smooth with only a few small lumps remaining.
- Stir in the melted butter, brown sugar, egg, and vanilla extract; whisk until the mixture is cohesive and sugar has mostly dissolved.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
- Using a spatula, gently fold the mixture together until no streaks of white flour remain.
- Carefully fold in the toasted nuts to ensure even distribution.
- Pour the batter into the prepared pan, smooth the top, and bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
