Ingredients:

  • 3 large overripe bananas, mashed (approx. 450g)
  • 1/2 cup unsalted butter, melted (115g)
  • 3/4 cup light brown sugar, packed (150g)
  • 1 large egg, room temperature (50g)
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 3/4 cup chopped walnuts or pecans, toasted (85g)

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until smooth with only a few small lumps remaining.
  3. Stir in the melted butter, brown sugar, egg, and vanilla extract; whisk until the mixture is cohesive and sugar has mostly dissolved.
  4. Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
  5. Using a spatula, gently fold the mixture together until no streaks of white flour remain.
  6. Carefully fold in the toasted nuts to ensure even distribution.
  7. Pour the batter into the prepared pan, smooth the top, and bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
