Ingredients:

  • 3 large overripe bananas, mashed (approx. 300g)
  • 1/2 cup unsalted butter, melted and cooled (115g)
  • 1/4 cup unsweetened applesauce (60ml)
  • 1/2 cup light brown sugar, packed (100g)
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract (5ml)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1/2 tsp ground cinnamon (2g)
  • 3/4 cup semi-sweet chocolate chips (130g)
  • 1 tbsp flour (8g)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease your 9x5 loaf pan with butter or line it with parchment paper, leaving an overhang on the sides for a quick lift.
  2. In a large bowl, mash the bananas until smooth. Whisk in the melted butter, applesauce, brown sugar, egg, and vanilla until the mixture is cohesive.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Using a spatula, gently fold the ingredients together until no flour streaks remain.
  4. Toss the chocolate chips in a tablespoon of flour, then fold them into the batter. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 50–60 minutes. The loaf is ready when a toothpick inserted into the center comes out with a few moist crumbs. Let it cool in the pan for 10 minutes before transferring to a wire rack.
