Ingredients:
- 6 cups (550g) shredded green cabbage
- 2 cups (150g) shredded carrots
- ½ cup (50g) thinly sliced red onion
- 1 tbsp (15g) kosher salt
- 1 cup (240ml) mayonnaise
- ¼ cup (60ml) apple cider vinegar
- 3 tbsp (36g) granulated sugar
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (5g) celery seed
- ½ tsp (3g) garlic powder
- ½ tsp (3g) black pepper
- ½ tsp (3g) salt
Instructions:
- Place shredded cabbage in a colander and toss with 1 tbsp (15g) kosher salt.
- Let the cabbage rest for 10 minutes to draw out excess moisture.
- Rinse the cabbage thoroughly with cold water and pat dry with paper towels.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, lemon juice, celery seed, garlic powder, salt, and pepper.
- Whisk until the sugar is completely dissolved and the mixture looks glossy and smooth.
- Combine the dried cabbage, carrots, and red onion in a large mixing bowl.
- Pour the dressing over the vegetables.
- Toss gently with large spoons until every shred of cabbage is coated in a velvety layer of dressing.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to marry.
