Ingredients:
- 1/2 cup (113g) unsalted butter, melted and cooled slightly
- 3/4 cup (150g) brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 3 medium overripe bananas, mashed (~340g)
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- Use a fork to mash the bananas in a small bowl until mostly smooth.
- In a large mixing bowl, whisk the melted butter and brown sugar together until smooth.
- Stir in the egg and vanilla extract, then fold in the mashed bananas.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
- Gently stir with a spatula until no streaks of flour remain, taking care not to overmix.
- Pour the batter into the prepared pan and smooth the top. Bake for 60 to 65 minutes until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
