Ingredients:

  • 1/2 cup (113g) unsalted butter, melted and cooled slightly
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 3 medium overripe bananas, mashed (~340g)
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. Use a fork to mash the bananas in a small bowl until mostly smooth.
  3. In a large mixing bowl, whisk the melted butter and brown sugar together until smooth.
  4. Stir in the egg and vanilla extract, then fold in the mashed bananas.
  5. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
  6. Gently stir with a spatula until no streaks of flour remain, taking care not to overmix.
  7. Pour the batter into the prepared pan and smooth the top. Bake for 60 to 65 minutes until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
