Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg
  • 2 tsp (10ml) pure vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 tsp (5g) baking powder
  • ¼ tsp (1.5g) salt
  • 1 cup (120g) powdered sugar, sifted
  • 2 tbsp (30ml) milk
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Cream the softened butter and granulated sugar together on medium-high speed for 2-3 minutes until the texture is pale and fluffy.
  2. Beat in the egg and vanilla extract until the mixture is fully emulsified and smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Turn the mixer to the lowest setting and slowly add the flour mixture, mixing only until no white streaks of flour remain.
  5. Divide the dough into two discs, flatten slightly, wrap tightly in plastic wrap, and refrigerate for at least 2 hours.
  6. Preheat the oven to 350°F (175°C).
  7. Roll the chilled dough on a floured surface to about 1/4 inch thickness, cut into shapes using cookie cutters, and bake for 10 minutes until the edges are barely golden.
  8. Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth and velvety.
