Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large (50g) egg
- 2 tsp (10ml) pure vanilla extract
- 2 ½ cups (315g) all-purpose flour
- 1 tsp (5g) baking powder
- ¼ tsp (1.5g) salt
- 1 cup (120g) powdered sugar, sifted
- 2 tbsp (30ml) milk
- 1 tsp (5ml) vanilla extract
Instructions:
- Cream the softened butter and granulated sugar together on medium-high speed for 2-3 minutes until the texture is pale and fluffy.
- Beat in the egg and vanilla extract until the mixture is fully emulsified and smooth.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Turn the mixer to the lowest setting and slowly add the flour mixture, mixing only until no white streaks of flour remain.
- Divide the dough into two discs, flatten slightly, wrap tightly in plastic wrap, and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (175°C).
- Roll the chilled dough on a floured surface to about 1/4 inch thickness, cut into shapes using cookie cutters, and bake for 10 minutes until the edges are barely golden.
- Prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth and velvety.
