Ingredients:
- 1 ¼ cups (180g) dates, pitted and packed
- 2 cups (200g) shredded coconut, toasted
- ½ cup (125g) almond butter
- 1 tsp (5ml) vanilla extract
- ¼ tsp (1.5g) salt
- 1 cup (175g) dark chocolate chips
- 2 tbsp (30ml) coconut oil, melted
Instructions:
- Place pitted dates in the food processor and pulse until they form a thick, sticky paste.
- Add the toasted coconut, almond butter, vanilla, and salt. Pulse in short bursts until the mixture looks like wet sand and clumps together when pressed.
- Line an 8x8 inch square baking pan with parchment paper. Pour the mixture in and press down firmly with the bottom of a flat glass until dense and solid.
- Combine dark chocolate chips and melted coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until glossy and smooth.
- Pour the melted chocolate over the base and spread evenly with a spatula.
- Sprinkle the top with toasted coconut flakes for garnish.
- Chill in the refrigerator for 1 hour before slicing into 12 bars.
