Ingredients:

  • 1 ¼ cups (180g) dates, pitted and packed
  • 2 cups (200g) shredded coconut, toasted
  • ½ cup (125g) almond butter
  • 1 tsp (5ml) vanilla extract
  • ¼ tsp (1.5g) salt
  • 1 cup (175g) dark chocolate chips
  • 2 tbsp (30ml) coconut oil, melted

Instructions:

  1. Place pitted dates in the food processor and pulse until they form a thick, sticky paste.
  2. Add the toasted coconut, almond butter, vanilla, and salt. Pulse in short bursts until the mixture looks like wet sand and clumps together when pressed.
  3. Line an 8x8 inch square baking pan with parchment paper. Pour the mixture in and press down firmly with the bottom of a flat glass until dense and solid.
  4. Combine dark chocolate chips and melted coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until glossy and smooth.
  5. Pour the melted chocolate over the base and spread evenly with a spatula.
  6. Sprinkle the top with toasted coconut flakes for garnish.
  7. Chill in the refrigerator for 1 hour before slicing into 12 bars.
