Ingredients:
- 3 tbsp unsweetened cocoa powder
- 2 oz high-quality semi-sweet chocolate, roughly chopped
- 3 tbsp granulated sugar
- 2 cups whole milk
- 1/4 cup heavy cream
- 1/2 tsp pure vanilla extract
- 1 pinch fine sea salt
Instructions:
- In a small heavy-bottomed saucepan, whisk together the cocoa powder, sugar, and fine sea salt until lumps are broken up.
- Add 2 tablespoons of the whole milk to the dry ingredients and stir vigorously to create a concentrated, smooth chocolate slurry.
- Gradually pour in the remaining whole milk and the heavy cream while whisking constantly over medium-low heat.
- Add the chopped semi-sweet chocolate and continue whisking until the chocolate is fully melted and the liquid is hot, but not boiling.
- Remove from heat, stir in the vanilla extract, and serve immediately. For ultimate smoothness, pour through a fine-mesh sieve into mugs.
