Ingredients:

  • 2 (6 oz / 170g) center-cut salmon fillets, skin-on
  • 1 tbsp (15ml) avocado oil
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) cracked black pepper
  • ¼ tsp (1g) garlic powder

Instructions:

  1. Pat the salmon fillets extremely dry with paper towels. Press firmly on the skin side until no moisture remains.
  2. Rub the oil directly onto the skin and the flesh. Sprinkle the salt, pepper, and garlic powder evenly across the top, ensuring the salt is pressed into the skin.
  3. Place the fillets skin-side down on a prepared baking sheet. Bake in a preheated oven at 425°F (218°C) for 12–15 minutes until the flesh turns opaque.
  4. Switch the oven to 'Broil' for the final 1–2 minutes, watching closely until the skin is bubbling and golden-brown.
