Ingredients:
- 2 cups (300g) Medjool dates, pitted
- 1 cup (115g) raw walnuts
- 1/4 tsp (1.5g) fine sea salt
- 1 tbsp (15ml) water
- 1 cup (170g) dark chocolate chips (70% cocoa or higher)
- 1 tbsp (15ml) coconut oil, melted
Instructions:
- Place the pitted dates, nuts, and salt into the food processor. Pulse until the mixture forms a thick, sticky dough. If the mixture feels too crumbly to hold together, add water one tablespoon at a time until it reaches a cohesive, clay-like texture.
- Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides. Transfer the date mixture into the pan and press down firmly using the back of a spoon or your palms until the surface is level.
- Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until the mixture is glossy and smooth. Pour the chocolate over the date base and spread it to the edges using a spatula.
- Place the pan in the refrigerator for at least 60 minutes. Once the chocolate is firm, lift the bars out using the parchment paper and slice into 12 equal rectangles.
