Ingredients:

  • 2 cups (300g) Medjool dates, pitted
  • 1 cup (115g) raw walnuts
  • 1/4 tsp (1.5g) fine sea salt
  • 1 tbsp (15ml) water
  • 1 cup (170g) dark chocolate chips (70% cocoa or higher)
  • 1 tbsp (15ml) coconut oil, melted

Instructions:

  1. Place the pitted dates, nuts, and salt into the food processor. Pulse until the mixture forms a thick, sticky dough. If the mixture feels too crumbly to hold together, add water one tablespoon at a time until it reaches a cohesive, clay-like texture.
  2. Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides. Transfer the date mixture into the pan and press down firmly using the back of a spoon or your palms until the surface is level.
  3. Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 30-second bursts, stirring between each, until the mixture is glossy and smooth. Pour the chocolate over the date base and spread it to the edges using a spatula.
  4. Place the pan in the refrigerator for at least 60 minutes. Once the chocolate is firm, lift the bars out using the parchment paper and slice into 12 equal rectangles.
