Ingredients:

  • 2 cups rolled oats (180g)
  • 3 cups unsweetened plant milk (720ml)
  • 2 tbsp maple syrup (30ml)
  • 1 tsp vanilla extract (5ml)
  • 1 pinch sea salt
  • 1 cup pitted Medjool dates (150g)
  • 1/4 cup warm water (60ml)
  • 2 tbsp almond butter (32g)
  • 1/2 tsp vanilla extract (2.5ml)
  • 1 pinch sea salt

Instructions:

  1. Add the rolled oats to the blender and pulse until they reach a fine, flour-like consistency.
  2. Pour in the plant milk, maple syrup, vanilla, and salt; blend on high for 30–60 seconds until completely smooth.
  3. Divide the blended oat mixture evenly among four glass jars.
  4. Place pitted dates in a bowl and cover with warm water for 10 minutes to soften.
  5. Drain the dates, reserving 2 tablespoons of the soaking water.
  6. Transfer the drained dates, reserved water, almond butter, vanilla, and salt into the blender and process until a glossy, smooth paste forms.
  7. Spoon a layer of the date caramel over the top of each oat jar.
  8. Seal the jars and refrigerate for at least 90 minutes or overnight to set.
