Ingredients:
- 1.5 cups (180g) rolled oats
- 1 cup (125g) all-purpose flour
- 1 tsp (5g) ground cinnamon
- 0.5 tsp (3g) baking soda
- 0.25 tsp (1.5g) salt
- 1 cup (150g) pitted dates, finely chopped
- 0.5 cup (115g) unsalted butter, softened
- 0.5 cup (100g) brown sugar, packed
- 1 large egg
- 1 tsp (5ml) vanilla extract
Instructions:
- Prepare the dates by chopping them into very small, uniform pieces. If dates are firm, soak in hot water for 5 minutes and drain well before chopping.
- Cream the softened butter and brown sugar together until pale and fluffy. Beat in the egg and vanilla extract.
- Slowly fold in the flour, cinnamon, baking soda, and salt, then stir in the oats and chopped dates until just combined.
- Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 10–12 minutes until edges are deep golden brown. Allow to cool on the sheet to firm up.
