Ingredients:

  • 1.5 cups (180g) rolled oats
  • 1 cup (125g) all-purpose flour
  • 1 tsp (5g) ground cinnamon
  • 0.5 tsp (3g) baking soda
  • 0.25 tsp (1.5g) salt
  • 1 cup (150g) pitted dates, finely chopped
  • 0.5 cup (115g) unsalted butter, softened
  • 0.5 cup (100g) brown sugar, packed
  • 1 large egg
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Prepare the dates by chopping them into very small, uniform pieces. If dates are firm, soak in hot water for 5 minutes and drain well before chopping.
  2. Cream the softened butter and brown sugar together until pale and fluffy. Beat in the egg and vanilla extract.
  3. Slowly fold in the flour, cinnamon, baking soda, and salt, then stir in the oats and chopped dates until just combined.
  4. Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart.
  5. Bake at 350°F (175°C) for 10–12 minutes until edges are deep golden brown. Allow to cool on the sheet to firm up.
