Ingredients:

  • 3 large overripe bananas, mashed (approx. 1 cup/225g)
  • 1/2 cup melted unsalted butter (115g)
  • 3/4 cup brown sugar, packed (150g)
  • 1 large egg (50g)
  • 1 tsp vanilla extract (5ml)
  • 1/4 cup sour cream (60g)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 1/2 tsp salt (3g)
  • 1 tsp ground cinnamon (2g)
  • 1/2 cup semi-sweet chocolate chips (85g)
  • 1/2 cup chopped walnuts (60g)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, mash the overripe bananas with a fork until mostly smooth.
  3. Whisk in the melted butter and brown sugar until the mixture reaches a thick syrup consistency.
  4. Stir in the egg, vanilla extract, and sour cream until the batter is glossy and uniform.
  5. Sift the all-purpose flour, baking soda, salt, and cinnamon directly into the wet ingredients.
  6. Using a spatula, gently fold the dry ingredients into the wet just until combined; do not overmix.
  7. Fold in the semi-sweet chocolate chips and chopped walnuts with three or four final strokes.
  8. Pour the batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Remove from the oven and allow to cool on a wire rack before slicing.
