Ingredients:

  • 3 large overripe bananas, mashed (approx. 340g)
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) light brown sugar, packed
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15ml) lemon juice
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until they reach a smooth, liquid-like consistency.
  3. Stir in the melted butter, brown sugar, vanilla extract, and lemon juice. Whisk until the sugar has mostly dissolved and the mixture looks glossy.
  4. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Gently fold the ingredients together with a spatula until no streaks of flour remain.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
