Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) light brown sugar, packed
- 1 tsp (5ml) pure vanilla extract
- 1 tbsp (15ml) lemon juice
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- In a large mixing bowl, mash the overripe bananas until they reach a smooth, liquid-like consistency.
- Stir in the melted butter, brown sugar, vanilla extract, and lemon juice. Whisk until the sugar has mostly dissolved and the mixture looks glossy.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture. Gently fold the ingredients together with a spatula until no streaks of flour remain.
- Pour the batter into the prepared pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
