Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1/2 cup unsalted melted butter (115g)
- 3/4 cup brown sugar, packed (150g)
- 1/4 cup plain Greek yogurt (60g)
- 1 tsp vanilla extract (5ml)
- 2 cups all-purpose flour (250g)
- 1 tsp baking soda (5g)
- 1/2 tsp salt (3g)
- 1 tsp ground cinnamon (2g)
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Use a fork to mash the bananas in a bowl until mostly smooth with only a few small lumps remaining.
- Stir in the melted butter, brown sugar, Greek yogurt, and vanilla extract until the mixture is a uniform, creamy consistency.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
- Using a rubber spatula, gently fold the dry ingredients into the wet batter. Stop as soon as no streaks of flour remain to avoid overmixing.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until the crust is mahogany-colored and a toothpick inserted into the center comes out clean or with a few moist crumbs.
