Ingredients:

  • 1/2 cup (100g) active sourdough starter
  • 1 cup (240g) whole milk, warmed to 90°F
  • 1 large egg, room temperature
  • 1/2 cup (113g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 4 cups (500g) bread flour
  • 1 tsp fine sea salt
  • 1 cup (200g) brown sugar, packed
  • 2 tbsp ground cinnamon
  • 1/2 cup (113g) unsalted butter, softened (for filling)
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (56g) unsalted butter, softened (for frosting)
  • 1 1/2 cups (180g) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions:

  1. In a stand mixer bowl, whisk the warm milk, sugar, and sourdough starter until dissolved.
  2. Add the egg and half the bread flour, mixing until a thick paste forms.
  3. Add the remaining flour and salt. Use the dough hook to knead until a shaggy dough forms.
