Ingredients:

  • 9 cups Rice Chex cereal
  • 1 cup small vanilla wafer cookies
  • 1.5 cups white chocolate chips
  • 2 tbsp unsalted butter
  • 0.5 tsp pure vanilla bean paste
  • 1 cup powdered sugar
  • 0.5 cup white cake mix, heat-treated
  • 1 oz freeze-dried strawberries, pulverized into powder
  • 3 oz strawberry Jello mix

Instructions:

  1. Pulverize the 1 oz freeze dried strawberries in a food processor until they become a fine, vibrant powder. Toss this powder with the 1 cup powdered sugar, 0.5 cup heat treated cake mix, and 3 oz strawberry Jello mix in a large gallon bag.
  2. Place the 1.5 cups white chocolate chips and 2 tbsp unsalted butter in a glass bowl. Microwave in 30 second bursts, stirring between each, until the mixture is completely silky.
  3. Place the 9 cups Rice Chex and 1 cup halved vanilla wafers into your largest bowl. Pour the 0.5 tsp vanilla bean paste into the melted chocolate and stir quickly.
  4. Drizzle the chocolate over the cereal and wafers. Use a rubber spatula to fold the mixture until every square is glistening and coated.
  5. Transfer the wet cereal into the bag with the strawberry sugar mixture. Seal the bag with plenty of air trapped inside and shake vigorously for 1 minute until the cereal looks like pink clouds.
  6. Spread the mixture out onto two large baking sheets in a single layer. Let it sit at room temperature for 20 minutes until the coating is dry to the touch.
