Ingredients:
- 9 cups Rice Chex cereal
- 1 cup small vanilla wafer cookies
- 1.5 cups white chocolate chips
- 2 tbsp unsalted butter
- 0.5 tsp pure vanilla bean paste
- 1 cup powdered sugar
- 0.5 cup white cake mix, heat-treated
- 1 oz freeze-dried strawberries, pulverized into powder
- 3 oz strawberry Jello mix
Instructions:
- Pulverize the 1 oz freeze dried strawberries in a food processor until they become a fine, vibrant powder. Toss this powder with the 1 cup powdered sugar, 0.5 cup heat treated cake mix, and 3 oz strawberry Jello mix in a large gallon bag.
- Place the 1.5 cups white chocolate chips and 2 tbsp unsalted butter in a glass bowl. Microwave in 30 second bursts, stirring between each, until the mixture is completely silky.
- Place the 9 cups Rice Chex and 1 cup halved vanilla wafers into your largest bowl. Pour the 0.5 tsp vanilla bean paste into the melted chocolate and stir quickly.
- Drizzle the chocolate over the cereal and wafers. Use a rubber spatula to fold the mixture until every square is glistening and coated.
- Transfer the wet cereal into the bag with the strawberry sugar mixture. Seal the bag with plenty of air trapped inside and shake vigorously for 1 minute until the cereal looks like pink clouds.
- Spread the mixture out onto two large baking sheets in a single layer. Let it sit at room temperature for 20 minutes until the coating is dry to the touch.
