Ingredients:
- 1 cup (150g) fresh strawberries, hulled and halved
- 1 cup (160g) cantaloupe, cubed into 1/2 inch (1.3cm) pieces
- 1 cup (150g) fresh pineapple, cubed into 1/2 inch (1.3cm) pieces
- 1 cup (140g) honeydew melon, cubed into 1/2 inch (1.3cm) pieces
- 1 cup (150g) green grapes, seedless
- 1 cup (150g) blueberries, whole
- 1 cup (160g) purple grapes or blackberries
- 2 tbsp (30ml) fresh lemon juice
- 1 tbsp (21g) honey
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Wash all produce thoroughly. Dice the cantaloupe, pineapple, and honeydew into uniform 1/2 inch (1.3cm) cubes. Hull the strawberries and halve them if necessary.
- In a small bowl, whisk together the lemon juice, honey, and vanilla extract until the mixture is smooth and the honey is fully incorporated.
- Slide the fruit onto the bamboo skewers in the following order: Strawberry, Cantaloupe, Pineapple, Honeydew, Green Grape, Blueberry, and Purple Grape. Press the fruit firmly together.
- Lightly brush the citrus glaze over the assembled skewers using a pastry brush or a spoon. Arrange on a serving platter.
