Ingredients:
- 2 medium (1 lb / 450g) Japanese Zucchini, sliced into ¼ inch rounds
- 1 medium (5 oz / 140g) Yellow Onion, thinly sliced
- 2 tbsp (30ml) Vegetable Oil
- 1 tbsp (15ml) Toasted Sesame Oil
- 2 tbsp (30ml) Soy Sauce
- 1 tbsp (15ml) Teriyaki Sauce
- 1 tsp (5ml) Honey
- 1 clove (3g) Garlic, minced
- 1 tsp (2g) Fresh Ginger, grated
- ¼ tsp (1g) Crushed Red Pepper Flakes
- 1 tsp (5g) Toasted Sesame Seeds
- 2 stalks (10g) Green Onions, thinly sliced
Instructions:
- Whisk together the soy sauce, teriyaki, honey, garlic, ginger, and red pepper flakes in a small bowl. Slice the Japanese Zucchini into uniform rounds and the onion into thin strips.
- Heat vegetable oil in a large skillet over medium high heat until shimmering.
- Add the sliced onions and sauté for 3 minutes until translucent and slightly browned.
- Toss in the Japanese Zucchini and sear for another 3–4 minutes, stirring occasionally, until the edges are golden brown.
- Drizzle in the toasted sesame oil.
- Pour the mixed umami glaze over the vegetables.
- Stir fry for 1–2 minutes on high heat until the sauce thickens into a glossy coating and smells nutty.
- Remove from heat immediately.
- Garnish with toasted sesame seeds and sliced green onions.
