Ingredients:

  • 2 medium (1 lb / 450g) Japanese Zucchini, sliced into ¼ inch rounds
  • 1 medium (5 oz / 140g) Yellow Onion, thinly sliced
  • 2 tbsp (30ml) Vegetable Oil
  • 1 tbsp (15ml) Toasted Sesame Oil
  • 2 tbsp (30ml) Soy Sauce
  • 1 tbsp (15ml) Teriyaki Sauce
  • 1 tsp (5ml) Honey
  • 1 clove (3g) Garlic, minced
  • 1 tsp (2g) Fresh Ginger, grated
  • ¼ tsp (1g) Crushed Red Pepper Flakes
  • 1 tsp (5g) Toasted Sesame Seeds
  • 2 stalks (10g) Green Onions, thinly sliced

Instructions:

  1. Whisk together the soy sauce, teriyaki, honey, garlic, ginger, and red pepper flakes in a small bowl. Slice the Japanese Zucchini into uniform rounds and the onion into thin strips.
  2. Heat vegetable oil in a large skillet over medium high heat until shimmering.
  3. Add the sliced onions and sauté for 3 minutes until translucent and slightly browned.
  4. Toss in the Japanese Zucchini and sear for another 3–4 minutes, stirring occasionally, until the edges are golden brown.
  5. Drizzle in the toasted sesame oil.
  6. Pour the mixed umami glaze over the vegetables.
  7. Stir fry for 1–2 minutes on high heat until the sauce thickens into a glossy coating and smells nutty.
  8. Remove from heat immediately.
  9. Garnish with toasted sesame seeds and sliced green onions.
