Ingredients:
- 1.5 lbs chicken breast, cut into 1-inch cubes
- 4 cups fresh broccoli florets
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 8 oz full-fat cream cheese, softened
- 1/2 cup heavy cream
- 1/4 cup chicken bone broth
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C). Heat olive oil in a large skillet over medium-high heat.
- Season chicken with garlic powder and smoked paprika, then sear for 5 minutes until golden brown on all sides.
- Remove chicken and set aside; in the same pan, whisk the 8 oz softened cream cheese, 1/2 cup heavy cream, and 1/4 cup bone broth until smooth and velvety.
- Toss the 4 cups broccoli florets into the sauce and simmer for 2 minutes until bright green and slightly tender. Fold the seared chicken back into the sauce mixture.
- Transfer everything to a baking dish (if not using an oven safe skillet) and top with 1 cup cheddar, 1/2 cup mozzarella, and 1/4 cup Parmesan.
- Bake for 15 minutes until the cheese is bubbling and the edges are crackling. Garnish with 1 tbsp fresh parsley and let it sit for 5 minutes before serving.
