Ingredients:

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 4 cups fresh broccoli florets
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup chicken bone broth
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C). Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with garlic powder and smoked paprika, then sear for 5 minutes until golden brown on all sides.
  3. Remove chicken and set aside; in the same pan, whisk the 8 oz softened cream cheese, 1/2 cup heavy cream, and 1/4 cup bone broth until smooth and velvety.
  4. Toss the 4 cups broccoli florets into the sauce and simmer for 2 minutes until bright green and slightly tender. Fold the seared chicken back into the sauce mixture.
  5. Transfer everything to a baking dish (if not using an oven safe skillet) and top with 1 cup cheddar, 1/2 cup mozzarella, and 1/4 cup Parmesan.
  6. Bake for 15 minutes until the cheese is bubbling and the edges are crackling. Garnish with 1 tbsp fresh parsley and let it sit for 5 minutes before serving.
