Ingredients:

  • 1 pint (250g) cherry tomatoes
  • 8 oz (225g) mini mozzarella pearls
  • 20 leaves (10g) fresh basil
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/4 tsp (1.5g) sea salt
  • 1/4 tsp (1.2g) cracked black pepper
  • 1/2 cup (120ml) balsamic vinegar
  • 1 tsp (5ml) honey
  • 1 pinch sea salt

Instructions:

  1. Pour the balsamic vinegar and honey into a small saucepan over medium-low heat. Simmer gently without stirring too aggressively until the liquid reduces by half and becomes syrupy. Remove from heat to cool.
  2. In a medium mixing bowl, combine the cherry tomatoes and mozzarella pearls. Drizzle with olive oil, salt, and pepper, then gently toss until coated.
  3. Slide one cherry tomato onto the skewer, followed by a folded basil leaf, and finish with one mozzarella pearl. Repeat for all 20 skewers.
  4. Arrange the skewers on a platter and drizzle the cooled balsamic reduction in a zigzag motion across the top just before serving.
