Ingredients:
- 1 pint (250g) cherry tomatoes
- 8 oz (225g) mini mozzarella pearls
- 20 leaves (10g) fresh basil
- 1 tbsp (15ml) extra virgin olive oil
- 1/4 tsp (1.5g) sea salt
- 1/4 tsp (1.2g) cracked black pepper
- 1/2 cup (120ml) balsamic vinegar
- 1 tsp (5ml) honey
- 1 pinch sea salt
Instructions:
- Pour the balsamic vinegar and honey into a small saucepan over medium-low heat. Simmer gently without stirring too aggressively until the liquid reduces by half and becomes syrupy. Remove from heat to cool.
- In a medium mixing bowl, combine the cherry tomatoes and mozzarella pearls. Drizzle with olive oil, salt, and pepper, then gently toss until coated.
- Slide one cherry tomato onto the skewer, followed by a folded basil leaf, and finish with one mozzarella pearl. Repeat for all 20 skewers.
- Arrange the skewers on a platter and drizzle the cooled balsamic reduction in a zigzag motion across the top just before serving.
