Ingredients:
- 3 large overripe bananas, mashed (approx. 340g)
- 1/2 cup unsalted butter, melted (113g)
- 3/4 cup brown sugar, packed (150g)
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup Greek yogurt (60g)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips (170g)
- 2 tbsp chocolate chips (30g)
- 1 pinch flaky sea salt
Instructions:
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until mostly smooth.
- Whisk in the melted butter and brown sugar until the mixture looks glossy.
- Stir in the egg, vanilla, and Greek yogurt until fully emulsified.
- Sift the flour, baking soda, and salt directly into the wet mixture.
- Using a spatula, fold gently until no streaks of white flour remain; do not overmix.
- Fold in the semi-sweet chocolate chips.
- Pour the batter into the prepared pan and sprinkle the topping chocolate chips and flaky sea salt on top.
- Bake for 65–75 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bread rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
