Ingredients:

  • 3 large overripe bananas, mashed (approx. 340g)
  • 1/2 cup unsalted butter, melted (113g)
  • 3/4 cup brown sugar, packed (150g)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup Greek yogurt (60g)
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips (170g)
  • 2 tbsp chocolate chips (30g)
  • 1 pinch flaky sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until mostly smooth.
  3. Whisk in the melted butter and brown sugar until the mixture looks glossy.
  4. Stir in the egg, vanilla, and Greek yogurt until fully emulsified.
  5. Sift the flour, baking soda, and salt directly into the wet mixture.
  6. Using a spatula, fold gently until no streaks of white flour remain; do not overmix.
  7. Fold in the semi-sweet chocolate chips.
  8. Pour the batter into the prepared pan and sprinkle the topping chocolate chips and flaky sea salt on top.
  9. Bake for 65–75 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Let the bread rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
