Ingredients:

  • 3 large overripe bananas, mashed (340g)
  • 1/2 cup unsalted butter, melted (115g)
  • 3/4 cup brown sugar, packed (150g)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (177°C) and grease a 9x5 inch loaf pan with butter or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork, leaving tiny chunks for texture.
  3. Stir the melted butter into the mashed bananas until combined.
  4. Whisk in the brown sugar, egg, and vanilla extract until the mixture looks glossy.
  5. Sprinkle the baking soda, salt, and cinnamon directly over the wet ingredients, then fold in the flour, stirring only until the white streaks disappear.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50–60 minutes, or until the top is deep golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
  8. Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
