Ingredients:
- 3 large overripe bananas, mashed (340g)
- 1/2 cup unsalted butter, melted (115g)
- 3/4 cup brown sugar, packed (150g)
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
Instructions:
- Preheat your oven to 350°F (177°C) and grease a 9x5 inch loaf pan with butter or line it with parchment paper.
- In a large mixing bowl, mash the bananas with a fork, leaving tiny chunks for texture.
- Stir the melted butter into the mashed bananas until combined.
- Whisk in the brown sugar, egg, and vanilla extract until the mixture looks glossy.
- Sprinkle the baking soda, salt, and cinnamon directly over the wet ingredients, then fold in the flour, stirring only until the white streaks disappear.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until the top is deep golden brown and a toothpick inserted into the center comes out with just a few moist crumbs.
- Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
