Ingredients:
- 4 lbs Large Sweet Potatoes (approx. 5-6 medium)
- 0.5 cup Unsalted Butter, melted
- 0.5 cup Packed Light Brown Sugar
- 0.5 cup Whole Milk
- 2 Large Eggs, room temperature
- 1 tbsp Vanilla Bean Paste or Extract
- 1 tsp Kosher Salt
- 0.5 tsp Ground Cinnamon
- 0.25 tsp Ground Nutmeg
- 1 cup Chopped Pecans
- 0.33 cup All-purpose Flour
- 0.25 cup Brown Sugar (for topping)
- 3 tbsp Melted Butter (for topping)
- 2 cups Mini Marshmallows
Instructions:
- Preheat oven to 400°F (200°C). Prepare a foil lined baking sheet for easy cleanup.
- Pierce the sweet potatoes. Use a fork to poke several holes in each potato to allow steam to escape. Note: This prevents the potatoes from bursting under pressure.
- Roast for 45–60 minutes. Place on the tray and bake until the skins are wrinkled and the centers feel very soft when squeezed.
- Cool and peel. Let them sit for 10 minutes, then the skins should slide right off by hand.
- Reduce oven to 350°F (175°C). While the potatoes cool, dial back the heat for the second phase of cooking.
- Mash until smooth. In a large bowl, use your electric hand mixer to break down the roasted flesh.
- Incorporate the base ingredients. Whisk in the 0.5 cup melted butter, milk, 0.5 cup brown sugar, eggs, vanilla, salt, cinnamon, and nutmeg. Continue until a thick, uniform custard forms.
- Spread the mixture. Pour the custard into your greased 9x13 dish, smoothing the top with a spatula.
- Prepare the pecan topping. Mix pecans, flour, 0.25 cup brown sugar, and 3 tbsp melted butter in a small bowl.
- Layer and bake. Scatter the pecan mix over the top. Bake for 25 minutes until the topping is fragrant and bubbling.
- Finish with marshmallows. If using, add the mini marshmallows and return to the oven for 5-8 minutes until golden brown and puffed.
