Ingredients:
- 1 lb zucchini, sliced into 1/2-inch rounds or quarters
- 1/3 cup freshly grated Parmesan cheese
- 1 tbsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1/4 tsp dried oregano
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp lemon zest
Instructions:
- Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper. Note: Preheating is non negotiable for a good sear.
- Slice the zucchini into uniform 1/2 inch thick rounds or quarters.
- In a large mixing bowl, combine the olive oil, garlic powder, oregano, salt, pepper, and lemon zest.
- Add the zucchini to the bowl and toss thoroughly until every piece is glossy.
- Sprinkle the Parmesan cheese over the zucchini and toss once more until each piece is encased in a thin layer of cheese.
- Arrange the zucchini in a single layer on the baking sheet. Note: Do not overlap the pieces or they will steam.
- Roast for 10–12 minutes until the edges start to soften and smell toasted.
- Switch the oven to 'Broil' for the final 2–3 minutes.
- Watch closely until the cheese is bubbling and has turned a deep golden brown.
