Ingredients:

  • 1 lb zucchini, sliced into 1/2-inch rounds or quarters
  • 1/3 cup freshly grated Parmesan cheese
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/2 tsp lemon zest

Instructions:

  1. Preheat your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper. Note: Preheating is non negotiable for a good sear.
  2. Slice the zucchini into uniform 1/2 inch thick rounds or quarters.
  3. In a large mixing bowl, combine the olive oil, garlic powder, oregano, salt, pepper, and lemon zest.
  4. Add the zucchini to the bowl and toss thoroughly until every piece is glossy.
  5. Sprinkle the Parmesan cheese over the zucchini and toss once more until each piece is encased in a thin layer of cheese.
  6. Arrange the zucchini in a single layer on the baking sheet. Note: Do not overlap the pieces or they will steam.
  7. Roast for 10–12 minutes until the edges start to soften and smell toasted.
  8. Switch the oven to 'Broil' for the final 2–3 minutes.
  9. Watch closely until the cheese is bubbling and has turned a deep golden brown.
