Ingredients:
- 4 (6 oz / 170g) salmon fillets, skin-on or skinless
- 1 lb (450g) fresh green beans, trimmed
- 2 tbsp (30ml) olive oil
- 1 tsp (6g) kosher salt
- ½ tsp (3g) cracked black pepper
- 3 tbsp (45ml) unsalted butter, melted
- 3 cloves (15g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- ½ tsp (1g) dried oregano or thyme
Instructions:
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- Place the trimmed green beans on the parchment paper, drizzle with olive oil, and sprinkle with half of the salt and pepper. Toss until evenly coated, then push the beans to the outer edges of the pan to create four spaces in the center.
- In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, and herbs.
- Pat the salmon fillets dry with a paper towel and place them in the center of the pan. Generously brush the lemon garlic glaze over the top of each fillet.
- Bake on the center rack for 12–15 minutes until the salmon flakes easily with a fork and the green beans are vibrant green with slight brown blister marks.
