Ingredients:

  • 3 large ripe bananas, mashed (approx. 1 ½ cups / 340g)
  • ½ cup (115g) unsalted butter, melted and cooled
  • ¾ cup (150g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • ¼ cup (60g) sour cream or Greek yogurt
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 ½ cups (190g) all-purpose flour

Instructions:

  1. Mash the bananas in a large mixing bowl until relatively smooth.
  2. Stir in the melted butter and brown sugar until combined.
  3. Whisk in the egg, vanilla, and sour cream until the mixture is velvety.
  4. Sift the baking soda and salt directly into the wet ingredients.
  5. Gently fold in the flour using a spatula until no white streaks remain; stop as soon as it's combined to avoid a tough loaf.
  6. Pour the batter into a greased 9x5 inch loaf pan.
  7. Bake at 350°F (175°C) for 50–60 minutes until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
