Ingredients:
- 3 large ripe bananas, mashed (approx. 1 ½ cups / 340g)
- ½ cup (115g) unsalted butter, melted and cooled
- ¾ cup (150g) light brown sugar, packed
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- ¼ cup (60g) sour cream or Greek yogurt
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 ½ cups (190g) all-purpose flour
Instructions:
- Mash the bananas in a large mixing bowl until relatively smooth.
- Stir in the melted butter and brown sugar until combined.
- Whisk in the egg, vanilla, and sour cream until the mixture is velvety.
- Sift the baking soda and salt directly into the wet ingredients.
- Gently fold in the flour using a spatula until no white streaks remain; stop as soon as it's combined to avoid a tough loaf.
- Pour the batter into a greased 9x5 inch loaf pan.
- Bake at 350°F (175°C) for 50–60 minutes until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack.
