Ingredients:
- 2 medium zucchini (approx 1 lb / 450g), sliced into 1/4 inch rounds or matchsticks
- 2 tbsp neutral oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp Sriracha
- 1 tsp toasted sesame oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 green onion, thinly sliced
- 1 tsp toasted sesame seeds
Instructions:
- Whisk together the soy sauce, honey, Sriracha, and sesame oil in a small bowl until the honey is fully dissolved. Slice the zucchini uniformly to ensure they all cook at the same rate.
- Heat the neutral oil in a skillet over medium-high heat until it shimmers. Add the zucchini in a single layer and let them sit undisturbed for 2-3 minutes until they develop charred, golden-brown edges.
- Toss in the minced garlic and grated ginger. Stir-fry for 30-60 seconds until fragrant and the garlic is translucent.
- Pour the prepared sauce over the zucchini. Toss rapidly for 1-2 minutes until the sauce bubbles and thickens into a glossy glaze. Remove from heat immediately.
- Garnish with sliced green onions and toasted sesame seeds.
