Ingredients:

  • 3 large overripe bananas, mashed (approx. 350g)
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 tsp (2g) ground cinnamon
  • 3/4 cup (85g) chopped walnuts, toasted

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas with a fork until smooth with only a few small lumps remaining.
  3. Stir melted butter into the mashed bananas, then whisk in the brown sugar, egg, and vanilla extract until the mixture is a uniform golden-brown color.
  4. Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients. Gently fold the batter with a spatula until just combined.
  5. Gently fold in the toasted walnuts until evenly distributed.
  6. Pour batter into the prepared pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
