Ingredients:

  • 4 cups whole milk
  • 3 large eggs
  • 1/2 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground nutmeg

Instructions:

  1. Heat the whole milk in a saucepan over medium-low heat, stirring occasionally until steaming and small bubbles form around the edges. Remove from heat and stir in the salt.
  2. In a separate bowl, whisk the eggs and maple syrup until smooth.
  3. Slowly drizzle about 1/2 cup of the hot milk into the egg mixture, whisking constantly to temper the eggs.
  4. Gradually whisk in the remaining hot milk and the vanilla extract.
  5. Pour the mixture through a fine-mesh strainer into a 9x9 inch baking dish to remove any stray egg bits.
  6. Sprinkle the ground nutmeg evenly across the top.
  7. Bake in a 325°F (160°C) oven for 50–60 minutes until the edges are set but the center still has a slight, jiggly wobble.
