Ingredients:
- 4 cups whole milk
- 3 large eggs
- 1/2 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1/4 tsp fine sea salt
- 1/2 tsp ground nutmeg
Instructions:
- Heat the whole milk in a saucepan over medium-low heat, stirring occasionally until steaming and small bubbles form around the edges. Remove from heat and stir in the salt.
- In a separate bowl, whisk the eggs and maple syrup until smooth.
- Slowly drizzle about 1/2 cup of the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Gradually whisk in the remaining hot milk and the vanilla extract.
- Pour the mixture through a fine-mesh strainer into a 9x9 inch baking dish to remove any stray egg bits.
- Sprinkle the ground nutmeg evenly across the top.
- Bake in a 325°F (160°C) oven for 50–60 minutes until the edges are set but the center still has a slight, jiggly wobble.
