Ingredients:

  • 2 (6 oz / 170g) salmon fillets, skin-on
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 2 tbsp (28g) unsalted butter, melted
  • 3 cloves (9g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (2g) lemon zest
  • 1 tbsp (3g) fresh parsley, finely chopped
  • 1/4 tsp (1g) paprika

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets bone-dry with a paper towel and season both sides with salt and black pepper.
  3. In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, chopped parsley, and paprika.
  4. Coat the top and sides of each fillet generously with the garlic butter mixture.
  5. Roast in the oven for 12–15 minutes, or until the thickest part of the fillet reaches an internal temperature of 135°F (57°C).
  6. Remove from the oven and let the fish rest for 5 minutes before serving to allow the internal temperature to reach 145°F (63°C).
