Ingredients:
- 2 (6 oz / 170g) salmon fillets, skin-on
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) cracked black pepper
- 2 tbsp (28g) unsalted butter, melted
- 3 cloves (9g) garlic, minced
- 1 tbsp (15ml) fresh lemon juice
- 1 tsp (2g) lemon zest
- 1 tbsp (3g) fresh parsley, finely chopped
- 1/4 tsp (1g) paprika
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the salmon fillets bone-dry with a paper towel and season both sides with salt and black pepper.
- In a small bowl, whisk together melted butter, minced garlic, lemon juice, lemon zest, chopped parsley, and paprika.
- Coat the top and sides of each fillet generously with the garlic butter mixture.
- Roast in the oven for 12–15 minutes, or until the thickest part of the fillet reaches an internal temperature of 135°F (57°C).
- Remove from the oven and let the fish rest for 5 minutes before serving to allow the internal temperature to reach 145°F (63°C).
