Ingredients:
- 1.5 cups (150g) certified gluten-free rolled oats
- 1 cup (100g) almond flour
- 0.5 cup (115g) unsalted butter, softened
- 0.5 cup (100g) brown sugar, packed
- 0.5 tsp (3g) salt
- 2 cups (300g) pitted Medjool dates, chopped
- 1 cup (240ml) boiling water
- 1 tbsp (15ml) lemon juice
- 1 tsp (5ml) vanilla extract
- 0.25 tsp (1g) salt
Instructions:
- Place the chopped Medjool dates in a bowl and pour the boiling water over them. Let them soak for 5–10 minutes to soften.
- Transfer the dates and their soaking liquid into a food processor. Add the lemon juice, vanilla extract, and salt. Pulse until the mixture is smooth and velvety.
- In a large mixing bowl, cream together the softened butter and brown sugar until smooth.
- Stir in the certified gluten-free rolled oats, almond flour, and salt. Mix with a spatula until the dough resembles wet sand with a few clumps.
- Preheat oven to 350°F (175°C). Line a 9x9 inch pan with parchment paper, leaving an overhang on the sides.
- Press approximately 3/4 of the crumble mixture firmly into the bottom of the pan using the back of a spoon.
- Spread the date filling evenly over the base, smoothing it to the edges.
- Sprinkle the remaining crumble over the top, pressing very lightly, and bake for 30 minutes.
