Ingredients:
- 1 cup water
- 2 tbsp coconut oil
- 1 tbsp maple syrup
- 1/4 tsp fine sea salt
- 1 cup white whole wheat flour
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 3 tbsp coconut sugar
- 1 tbsp ground Ceylon cinnamon
- Avocado oil spray
Instructions:
- Combine 1 cup water, 2 tbsp coconut oil, 1 tbsp maple syrup, and 1/4 tsp salt in a saucepan over medium heat until bubbling vigorously.
- Dump in 1 cup white whole wheat flour all at once and stir rapidly with a spatula. Note: This creates the panade or dough base.
- Continue stirring over heat for about 1 minute until a film forms on the bottom and the dough pulls away into a ball.
- Move the dough to a bowl and let it sit for 5 minutes. Note: Adding the egg too soon will scramble it.
- Beat in 1 large egg and 1 tsp vanilla using a wooden spoon or hand mixer until the paste is glossy and smooth.
- Transfer the mixture into a piping bag with a star tip while the dough is still warm and pliable.
- Pipe 2.5 cm segments onto a parchment lined tray or directly into the air fryer basket, snipping with scissors.
- Spritz with avocado oil and cook at 180°C for 10-12 minutes until golden and firm to the touch.
- Immediately toss the hot bites in a bowl with 3 tbsp coconut sugar and 1 tbsp cinnamon until fully encrusted.
