Ingredients:

  • 1 lb soft white sandwich bread
  • 1/2 cup softened cream cheese
  • 2 tbsp mayonnaise
  • 1/4 cup finely grated carrots
  • 1/4 cup finely grated cucumbers, seeded and patted dry
  • 1 pinch salt
  • 1 pinch black pepper

Instructions:

  1. In a small bowl, combine the softened cream cheese and mayonnaise. Fold in the grated carrots and cucumbers until the mixture is a uniform, pale orange color. Season with salt and pepper, stirring until the texture is velvety and smooth.
  2. Lay two slices of bread side-by-side on a clean surface. Spread a generous, even layer of the filling onto one slice, ensuring it reaches almost to the edges. Top with the second slice and press down very lightly to bond the layers.
  3. Place your chosen sandwich cutters in the center of the sandwich. Press straight down with a firm, steady motion and lift the cutter carefully to reveal the shape. Repeat until all bread is used.
  4. Arrange the shaped sandwiches on a colorful tray. Optionally, place a small piece of curly parsley or a grape between each shape to keep them from sticking together.
