Ingredients:
- 1 lb soft white sandwich bread
- 1/2 cup softened cream cheese
- 2 tbsp mayonnaise
- 1/4 cup finely grated carrots
- 1/4 cup finely grated cucumbers, seeded and patted dry
- 1 pinch salt
- 1 pinch black pepper
Instructions:
- In a small bowl, combine the softened cream cheese and mayonnaise. Fold in the grated carrots and cucumbers until the mixture is a uniform, pale orange color. Season with salt and pepper, stirring until the texture is velvety and smooth.
- Lay two slices of bread side-by-side on a clean surface. Spread a generous, even layer of the filling onto one slice, ensuring it reaches almost to the edges. Top with the second slice and press down very lightly to bond the layers.
- Place your chosen sandwich cutters in the center of the sandwich. Press straight down with a firm, steady motion and lift the cutter carefully to reveal the shape. Repeat until all bread is used.
- Arrange the shaped sandwiches on a colorful tray. Optionally, place a small piece of curly parsley or a grape between each shape to keep them from sticking together.
