Ingredients:

  • 3 large overripe bananas, mashed
  • 1/2 cup neutral oil
  • 3/4 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 sliced banana
  • 1 tbsp turbinado sugar

Instructions:

  1. Preheat your oven to 325°F (165°C) and grease a 9x5-inch loaf pan.
  2. In a large bowl, mash the overripe bananas until mostly smooth.
  3. Whisk in the neutral oil, light brown sugar, egg, and vanilla extract until the mixture is emulsified and the sugar has mostly dissolved.
  4. Sift the all-purpose flour, baking soda, salt, and ground cinnamon directly into the wet ingredients.
  5. Using a spatula, gently fold the mixture together until no more streaks of white flour are visible, being careful not to overmix.
  6. Pour the batter into the prepared loaf pan.
  7. Place the sliced banana on top of the batter and sprinkle with turbinado sugar.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
