Ingredients:
- 3 large overripe bananas, mashed
- 1/2 cup neutral oil
- 3/4 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 sliced banana
- 1 tbsp turbinado sugar
Instructions:
- Preheat your oven to 325°F (165°C) and grease a 9x5-inch loaf pan.
- In a large bowl, mash the overripe bananas until mostly smooth.
- Whisk in the neutral oil, light brown sugar, egg, and vanilla extract until the mixture is emulsified and the sugar has mostly dissolved.
- Sift the all-purpose flour, baking soda, salt, and ground cinnamon directly into the wet ingredients.
- Using a spatula, gently fold the mixture together until no more streaks of white flour are visible, being careful not to overmix.
- Pour the batter into the prepared loaf pan.
- Place the sliced banana on top of the batter and sprinkle with turbinado sugar.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
