Ingredients:

  • 5 lbs Kirby or pickling cucumbers
  • 2 cups white onion, thinly sliced
  • 1/2 cup pickling salt
  • 2 quarts ice water
  • 3 cups apple cider vinegar
  • 2 cups packed brown sugar
  • 2 tbsp pickling salt
  • 1 tbsp mustard seeds
  • 1 tsp celery seeds
  • 1/2 tsp turmeric powder

Instructions:

  1. Slice cucumbers into 1/4-inch rounds and combine with thinly sliced onions in a large non-reactive bowl.
  2. Toss the cucumber and onion mixture with 1/2 cup pickling salt and cover completely with ice water. Let sit for 3 hours to remove excess moisture.
  3. Drain the cucumbers in a colander and rinse thoroughly with cold water to remove excess surface salt.
  4. In a heavy-bottomed saucepan, combine apple cider vinegar, brown sugar, 2 tbsp pickling salt, mustard seeds, celery seeds, and turmeric.
  5. Simmer the brine for approximately 5 minutes until the sugar is dissolved and the mixture is well blended.
