Ingredients:

  • 4 (6 oz / 170g) salmon fillets, skin-on
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/2 tsp (3g) sea salt
  • 1/4 tsp (1g) cracked black pepper
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tbsp (15ml) melted unsalted butter
  • 1 tbsp (15g) honey
  • 3 cloves (9g) garlic, minced
  • 1 tsp (2g) dried oregano

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the salmon fillets bone-dry with a paper towel, then rub each fillet with olive oil, salt, and pepper.
  3. In a small bowl, whisk together the lemon juice, melted butter, honey, minced garlic, and oregano.
  4. Spoon the glaze evenly over the top of each fillet and bake for 12–15 minutes until edges are deep orange-pink and the glaze is tacky.
  5. Remove from oven and let the fillets rest on a plate for 5 minutes to allow juices to redistribute.
