Ingredients:

  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (340g) mashed overripe bananas
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mash the bananas until smooth but slightly chunky.
  3. Stir in the melted butter, brown sugar, eggs, and vanilla. Mix until the batter is a uniform, creamy gold.
  4. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
  5. Using a rubber spatula, gently fold the ingredients together. Stop the moment no white streaks of flour remain to prevent overworking the batter.
  6. Pour the batter into the prepared pan and bake for 50–60 minutes.
  7. Test for doneness by inserting a toothpick into the center; it should come out with a few moist crumbs, but no raw batter.
  8. Let the loaf cool in the pan for 10 minutes before moving it to a wire rack.
