Ingredients:

  • 3 medium overripe bananas, mashed (~350g)
  • 1/2 cup neutral oil
  • 1/2 cup maple syrup or brown sugar
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
  2. In a large bowl, mash the bananas until no large lumps remain. Whisk in the oil, maple syrup, vanilla, and apple cider vinegar until the mixture is smooth and emulsified.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
  4. Using a spatula, gently fold the mixture together until no more streaks of dry flour are visible; do not over-mix.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50–60 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
