Ingredients:
- 3 medium overripe bananas, mashed (~350g)
- 1/2 cup neutral oil
- 1/2 cup maple syrup or brown sugar
- 1 tsp vanilla extract
- 1 tsp apple cider vinegar
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, mash the bananas until no large lumps remain. Whisk in the oil, maple syrup, vanilla, and apple cider vinegar until the mixture is smooth and emulsified.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet ingredients.
- Using a spatula, gently fold the mixture together until no more streaks of dry flour are visible; do not over-mix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until the edges pull away from the pan and a toothpick inserted into the center comes out clean or with a few moist crumbs.
