Ingredients:

  • 1 tube (12.4 oz / 350g) refrigerated pizza dough
  • 2 tbsp (30ml) melted butter
  • 1/2 tsp (3g) garlic powder
  • 1 pinch (1g) dried oregano
  • 1/2 cup (120ml) pizza sauce
  • 1 1/2 cups (170g) shredded low-moisture mozzarella cheese
  • 20 slices (60g) mini pepperoni
  • 1/4 cup (15g) grated Parmesan cheese

Instructions:

  1. Preheat your oven to 400°F (200°C) and liberally grease a 12-cup muffin tin with non-stick cooking spray.
  2. Unroll the refrigerated pizza dough on a lightly floured surface and use a pizza cutter to slice the dough into 20 equal squares.
  3. Press each dough square into the bottom and slightly up the sides of the muffin tin cups to create a small nest.
  4. Spoon 1 teaspoon (5ml) of pizza sauce into the center of each nest.
  5. Add a pinch of mozzarella cheese, tuck one or two mini pepperoni slices into the sauce, and top with a generous pinch of shredded mozzarella and a sprinkle of Parmesan cheese.
  6. Brush the exposed edges of the dough with the melted garlic-butter mixture.
  7. Bake for 12–15 minutes until the cheese is bubbling and mahogany-colored in spots and the crust is golden brown.
  8. Allow the pizza bites to cool in the tin for 5 minutes before serving.
